vanilla extract

Since I started seriously baking things from scratch on my own, my skills have developed.  Along with the expansion of my skills, my taste in the quality of ingredients has also developed.  Any baker knows that vanilla extract is your best friend when you are baking.  And I have used them all, and I am here to say that what you use for your vanilla extract can affect your final product.

About two years ago, I found out how to make your own vanilla extract.  Nothing but a little vodka and some vanilla beans.
The final product is a beautiful amber color with little magical flecks of vanilla bean goodness, and it makes everything taste wonderful.

Vanilla Extract

3 vanilla beans
1 cup vodka (I used Stolichnaya)

Other materials:
Clean glass bottle or jar
Measuring cup with spout

1.  Split the beans in half leaving the ends uncut.

2.  Place in container and fill with vodka.

3.  Close the container tightly and store in a dark, cool place for a minimum of 6-8 weeks.  Give the container a shake once in a while to agitate the beans and vodka.

4.  If needed and desired, replenish with vodka with use.

Ta-dah!  Your own vanilla extra.  Make it for yourself.  Make it for someone else.  Just make it to look at the pretty like flecks of vanilla float around in the amber liquid.  It smells good, it tastes good, it looks good.  Just go make it.
